Biscotti! Easy as...pie?


I've learned the key to biscotti is having a great base recipe. 
With this you can add any flavor imaginable.

Basic Biscotti
1/2 cup vegetable or olive oil (My preference is EVOO)
1 cup sugar
3 1/4 cups AP Flour
3 eggs
1 tbsp baking powder
1 tbsp anise extract

Preheat the oven to 375 degrees F.  I a medium bowl beat oil, eggs, sugar, extract until well blended.  Combine the flower and baking powder, then start adding to the egg mixture.  The dough will be thick and sticky.  Divide dough into 2 halves and form each half into long logs then press down to flatten to 1/2 inch or so.  Bake for 25-30 minutes.  Let cool for 15 minutes. Cut into 1" thick slices. Put back in over for about 10 more minutes, flipping each piece half way.  The biscotti should be a toasted brown.

Almond extract w/almond slivers
vanilla extract w/dried cranberries
chocolate chips
dip in melted chocolate
