I love cheese. Soft, hard, aged, fresh, sharp, mild. Cheeses are as intricate and unique as wine.
The best cheese I have ever had is Grana Padano. OMG! This cheese is more a dessert with a fruity sweet hint softening the sharp flavor and grainy texture. I didn't want to drink anything after tasting this cheese for fear of washing away the unbelievable flavor. Of course, you get what you pay for so yep, Grana Padano is not on the cheap side and is well worth the money. A little can go a long way.
This post isn't meant to be an ad for the cheese. The reason I even mention this cheese is because I was enjoying an Old Asiago hard cheese which is very good all its own, but not great like Grana.
I also have in our possession an aged Parma-Romano that is unique as well. This cheese is buttery with a salty ping at the end. Not great for eating plain; following it with a nice sweet red or crumbling it over pasta is ideal.
OK, I'm finished talking about cheese. Until I get more!
